Shannon Daniel

Hello! My name is Shannon Daniell, and I am lucky enough to serve as the Fit to Serve board president. I was born and raised here in Mattoon and my family has settled their roots here! I am recently engaged, and my other half’s name is Evan. I have two beautiful daughters- Delaney who is nine years old, and Landrie who is four years old. I can’t forget to mention our dog, named Huckleberry, who we also love very much. I have been an educator for around four years now and I have been blessed with the opportunity of teaching birth all the way up to third grade. When my oldest was in preschool, she and I had the opportunity to meet Bill Duey in one of the community gardens on a field trip. I was absolutely fascinated by the program! We got to pick green beans, taste raspberries, use wheelbarrows for mulch, and plant seeds in the garden! Fast forward to a few years ago when I was teaching kindergarten, Beau and Ashley brought the program into the schools. They taught hands-on, wonderful activities about seeds, pollination, and gardens, and I saw their love and excitement for this program shine in my classroom. When Beau came to me and asked me to serve on the board, I knew God invited me to this table for a reason. I urge anyone and everyone to come to our farmer’s markets, get to know our programs, find our community garden, check out our website, and learn more about how you can volunteer! This organization has truly changed my life for the better, and I appreciate the opportunity to give back to our community through Fit to Serve!
Alica Seng

Alicia is originally from Bridgeport, Nebraska but being a “Pastor’s Kid” has also lived in Iowa and West Virginia. She went to college at Muskingum College (now Muskingum University) in New Concord, Ohio. She graduated with double major in History and Middle Childhood Education. During her time there she published two local history books and had her first internship as a Youth Director at College Drive Presbyterian Church where she worked with Middle and High School Students. Alicia took her first teaching job in Cleveland, Ohio and has also worked with youth in Warren, Ohio and Bickleton, Washington where she has lived and worked for the last seven years. Throughout her 15 year teaching career she has taught 5th and 8th grade as well as K-12 Special Education, with an emphasis in Behavior Management. The Winter of 2023 she felt the call to FPC in Mattoon and she relocated here in June of the same year. She has a rather vivacious seven year old daughter named Cora, a dog named Winston, and two cats Jax and Jitterbug. As a former teacher, Alicia loves to read and learn new things. When she has the time she also has passion for cooking, baking and enjoys “hygge,” the Danish word for a love of all things cozy. She likes trying new things and going on short adventures, getting to know the local area and history. In TV and Movies, she prefers comedies such as “The Office” and “The Good Place” but also has an affinity for fantasy like the Harry Potter series. She loves herbal teas and cookies. She has recently taken up the craft form of “felting” and has enjoyed that as well. First and foremost, Alicia loves God and has a passion for youth and outreach into the community. She has a very big heart and wants to help wherever it is most needed. She loves being creative and finding solutions to problems. She views the Gospel as a common sense approach to life and loves the rules that God has given us for life. She believes that the Bible is God’s Holy Word and enjoys studying it daily. She is looking forward to working with the youth and community missions here in Mattoon.
Bud Munyon

I have lived in Mattoon and the surrounding area for 38 years and worked at Consolidated Communications for 37 of those years. My wife, Tammy, and I have 3 daughters and seven grandchildren. We attend United Christian Church, and have attended there, and Central Community Church, for over 15 years. I also serve on the Finance Team at UCC, in addition to teaching in the Firehouse, and assisting with other needs of the church. I serve on Fit-2-Serve because we help the community, and the kids in the community. I enjoy volunteering for the Learn-2-Grow program -- going out to the schools and teaching the kids about their food and where it comes from. I also enjoy helping with the Fit-2-Serve events, such as the Spring Event and the Fall Gala, as well as helping with the food pantry Fit-2-Serve is about developing the natural talents of those in the community -- equipping them with what they need -- and I love being part of that!
Dennis Cole
I was born and raised North of Mattoon Illinois on a 3rd generation family farm. Attended and graduated Arthur Jr. Sr. High School (class of 2000). I continued my education at Eastern Illinois University where I was recruited for football and received my degree in Community Health. In 2003 I began my coaching career at Arthur High School coaching High School boys Basketball and Jr. High/High School Track. After graduating from EIU, I began working with my parents operating our family-owned trucking company and farming. In 2022 I accepted a position with the City of Mattoon where I currently hold Superintendent of Public Works Department and in 2023 took a coaching position at Mattoon High School with girls basketball and track teams. My wife Melissa and I have been married since 2008 and have a beautiful daughter Layla. We have lived in Mattoon Since 2008, and Melissa has lived here her whole life. We have both been very involved in our community in many ways over the years. Melissa and I have both volunteered with the YMCA on multiple occasions. Melissa has volunteered for many years with the local Pride Sports Organization and we both love working with the kids. We also continue to be involved with Broadway Christian Church regularly where we are members. Finally we both somehow find time to coach at Mattoon High School. This is a true passion for both of us as we are truly focused on helping our student athletes be successful in sports. When I am not working or coaching, I enjoy tractor pulling and riding my motorcycle. As a family we love to get away to Branson Missouri which is our little home away from home.
Paul Icenogle
Paul Icenogle grew up on a livestock grain farm. Paul studied art at Eastern Illinois University. He also studied welding at Lakeland College and Horticulture at the University of Illinois. Paul’s professional life included his time as a welder, the produce manager at our local IGA, and was in charge of managing custodial duties and overseeing the grounds at Lakeland College. Paul retired from Lakeland College in 2012. Paul now spends his time attending to his personal garden, affectionately known as ” The Savory Palate”, sharing his horticulture knowledge with those trying their hand at their own gardening/growing endeavors, and traveling with his wife Betty.
Barb Kirts
Hi, my name is Barb Kirts. I am a retired educator of 40 years. I live in Mattoon with my husband of 23 years, Sean and our two sons Kegan (22) and Sawyer (20) years. I am excited for this opportunity to serve on the Fit-2-Serve Board and for my community. I have always wanted to volunteer in some capacity and now I am blessed to work with children at Farm-2-Table and Learn-2-Grow.
